La inscripci\u00f3n y coordinaci\u00f3n estuvo a cargo de la Direcci\u00f3n de Bromatolog\u00eda Municipal. Los docentes capacitadores fueron Miguel \u00c1ngel Blanco y Mar\u00eda Jos\u00e9 Santa Cruz.<\/p>\n\n\n\n<p>Estas jornadas fueron destinadas a carniceros y personal de carnicer\u00edas con los que, durante los 5 encuentros, se trabajaron contenidos tanto en aspectos t\u00e9cnicos como pr\u00e1cticos, procurando una mejora en la calidad sanitaria de la carne y los productos que ellos comercializan garantizando la salud de los consumidores.
